Sticky Apricot Flapjack Recipe
Makes enough to feed a small greedy film crew of 25. On an ordinary day halve the quantities.
1 tbsp. golden syrup
200g demerara sugar
100g self-raising flour
100g crushed cornflakes
150g chopped dried apricots
1/ Preheat oven to 190ºC
2/ Melt butter and syrup. Mix in apricots.
3/ In a separate bowl, mix together remaining dry ingredients.
4/ To this add the butter/apricot mixture. Stir till combined
5/ Pack into a baking tray pressing it in firmly.
6/ Bake for 15min until just firm.
7/ Cut into bars whilst still hot and then let it cool in the tray.
